Moti Mahal means “palace of pearls”. The name belongs to the kitchen that gave the world tandoori chicken and butter chicken, and it is the tradition chef Karam Jaryal has cooked in for more than three decades — now on Glenferrie Road.

The tandoor comes first
Breads, kebabs and whole fish go into a live charcoal clay oven, not a grill. It is slower and hotter, and it is the reason the food tastes the way it does.
Ground, not poured
Spices are roasted and ground in our own kitchen. Paneer is made in house. Nothing arrives as a pre-mixed sauce in a tin.
Cooked to order
Every curry is finished when you order it, which is why we ask for a little time — and why we can cook it as mild or as fierce as you like.
